Rice pudding is one of the most popular desserts in Latin America. It is the epitome of comfort food. Enjoy this desert but keep in mind that to stay healthy you need to eat small portions of these delicious treats.
Ingredients
3 cups whole milk
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
2 teaspoons vanilla extract
1 cinnamon stick
1 cup uncooked long grain rice (brown or white rice)
1 pinch salt
2 tablespoons rum or orange juice (optional)
1 pinch nutmeg
Preparation
1. Pour milk, sugar or Splenda®, and vanilla into a medium saucepan. Add cinnamon stick and rum or orange juice (optional). Bring to a boil.
2. Add rice and salt and cover. Cook over low heat for 30 minutes (45 minutes if using brown rice) or until most of the milk is absorbed. Remove saucepan from heat, set aside for 10-15 minutes.
3. Spoon rice pudding into dessert dishes. Sprinkle with nutmeg. Serve warm or chilled.

This delicious cake is great when paired with coffee or strawberries. You can enjoy sweets
occasionally as long as you remember to eat small portions.
Ingredients
6 egg whites
2 cups whipping cream
1 cup confectioners sugar
1/2 cup cake flour, sifted 3 times
1 teaspoon vanilla extract
butter to coat baking dish
Preparation
1. Butter an 8-inch square pan. Heat oven to 250 degrees F.
2. Beat egg whites until they form peaks. Set aside.
3. Beat cream until it forms peaks, the add sugar to it a little at a time, folding it in until all the sugar is used up. Gently fold egg whites and flour, by the large spoonful, into the cream and sugar mixture. Alternate egg whites and flour and be as gentle as you can.
4. Pour mixture into the buttered pan and bake for 1 ½ hour or until it is pale golden on top. To make sure cake is thoroughly cooked, test it by inserting a thin sharp knife. If the knife come out clean, the cake is done.
5. Take cake out of the oven and run a knife around the edge of the pan to loosen.
6. Once moderately cooled (approximately 15 minutes) take the cake out of the molding and let the cake cool completely on a cooling rack.
Serves: 6-10 handfuls - Prep Time: 20 min.

This quick snack is a great source of protein and taste. Make extra batches and freeze them. 1 handful of peanuts is a perfect serving.
Ingredients
1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon garlic powder
1/4 teaspoon cayenne powder
2 1/2 cups dry roasted peanuts
Preparation
1. Preheat oven to 300 F. Heat 1 tablespoon olive oil in heavy large skillet over medium heat.
2. Add chili powder, cumin, garlic powder and cayenne pepper until fragrant, about 30 seconds. Add peanuts and stir until coated, about 2 minutes. Transfer to large rimmed baking sheet.
3. Bake peanuts until golden brown and almost dry, stirring occasionally, about 15 minutes. Season with salt. Transfer to paper towel and drain. Cool.
Serves: 4 - Prep Time: 10 min.

Carbonated water (mineral, seltzer, etc.), 2 liter bottle
20 limes, juiced
sugar or sugar substitute, to taste

1. Juice 20 limes into a pitcher
2. Add water and sugar
3. Stir and serve chilled
