Egg and Cheese Taco

Serves: 1  -  Prep Time: 15 minutes

Tacos are a quintessential Mexican dish with endless varieties. With an egg and cheese filling, this taco turns into a nutritious breakfast that the whole family will love. As an added bonus, no utensils are needed to eat it! One egg has 13 essential nutrients and plays a role in weight management, muscle strength, healthy pregnancy, brain function, eye health and more. Corn tortillas are a low-fat, low-sodium food and contain calcium, potassium and fiber. Emerging research indicates consuming three servings of dairy products, such as cheese, as part of a healthy diet and exercise plan will help with weight loss and weight maintenance.

 

Ingredients

1 teaspoon canola oil

1 small corn, or whole wheat, tortilla

1 egg

3 thin slices of cheese

Salt and pepper, to taste

Salsa (optional)


Preparation

1. In a small pan, heat the oil and scramble the egg until cooked. Add salt and pepper to taste.
2. In a separate pan, heat the tortilla on both sides until it is easily pliable
3. Place the egg and cheese slices in the middle of the tortilla and fold
4. Eat while warm

 

Whole Grain Cereal and Orange Juice

Serves: 1 - Prep Time: 5 minutes

Eating breakfast provides the energy you need to feel and do your best. Cereal, milk, and orange juice are great, and quick, breakfast options to start your day. Cereal made from whole grains can help lower your cholesterol, which in turn could help reduce your risk of heart disease. Milk has the nutrients everybody needs to stay healthy, with calcium, vitamins D, A, B12, potassium and magnesium. Oranges, besides being high in vitamin C and fiber, also contain folic acid, beta-carotene, potassium, selenium, antioxidants, and plenty of phytochemicals, the bioactive compounds in plant foods that help nutrients boost the immune system.

 

 

Ingredients

3/4 of a cup of whole grain cereal

1/2 cup reduced fat milk (skim, 1% or 2%)

1 cup of orange juice

 

Preparation

1. In the bowl, add cold low fat milk to cereal (add fresh fruit if desired)
2. Prepare juice from concentrate or squeeze from fresh oranges.

 

 

Banana Shake

Serves: 1 -  Prep Time: 5 minutes

 

Shakes, or licuados are they are known in Spanish, are an easy-to-make, nutritious breakfast option. Soy milk is a great option for those who have type 2 diabetes. Research has shown that soy foods can play an important role in managing diabetes and the related risks. Soy protein has been shown in clinical studies to help decrease some harmful effects of kidney disease, which can result from diabetes. Soy foods also have a low glycemic index, which can help to normalize your blood sugar levels.

 

Ingredients

1 cup of soy milk
1 banana
1 tablespoon vanilla extract (optional)

Preparation

1. In a blender, mix all ingredients until smooth
2. Serve immediately

 

Spanish Omelet

Serves:  4 - Prep Time: 25 minutes  

            

 

 

The Spanish Omelet is stuffed with fried potatoes and finely cut onion, and fried using olive oil. It is traditional of Spain but is hugely popular in Latin America. This dish is very satisfying and is meant to be eaten in small portions. Potatoes, eggs, onions, and olive oils are all healthy components to this traditional dish.

 

 

 

 

Ingredients

3 large eggs
Salt, to taste
3 to 4 tablespoons olive oil
3 large potatoes, peeled and thinly sliced
1 onion, peeled and finely chopped

Preparation

1. Crack the eggs into a bowl. Whisk with a fork and add a pinch of salt.
2. Heat some oil in a frying pan.
3. Add the potato and fry for a couple of minutes. Add the onion and mix together.
4. When the potato starts to brown a little on the edges and is well integrated with the onions, add the eggs. Make sure the potato and onions are fully submerged by the eggs. Poke the potato to allow some of the egg to seep into the mashed mixture.
5. Fry this gently on low heat. While cooking shake the pan to loosen the omelet from the base and tidy the edges up with a wooden spoon. Do not over cook. The middle is meant to remain runny and gooey.
6. The egg will start setting. As this happens place a plate (one that is large enough to cover the pan completely) over the pan, and with a quick coordinated movement of both wrists flip the omelet over onto the plate and slide back into the pan to cook the underside.
7. Keep shaking the pan lightly so the omelet does not stick to the bottom.
8. Once it feels firm on the edges and soft in the middle (after about 1 minute) then slide the omelet back onto the plate. Let the omelet rest for about 5 to 10 minutes before serving. Cut into cake slices or cubes.

Coffee with Milk

Serves: 2 - Prep Time: 15 minutes

 

A traditional morning drink all over Latin America. It is always called Café con Leche, but it is

really Leche con Café.  You can make Café con Leche with any kind of coffee, but traditionally strong coffee is used.    

 

Ingredients

2 (1 1/4 ounce) shots espresso, hot

   (or 2 tablespoons of dissolvable coffee)
12 ounces milk, hot to warm
1-2 cinnamon sticks (optional)
SPLENDA® Brown Sugar Blend, to taste

Preparation

1. Warm the milk on the stovetop with a stick of cinnamon (optional)
2. Pour both espresso shots (or the dissolvable coffee) into the bottom of a cup.
3. Add the milk and discard the cinnamon stick.
4. Add sugar or Splenda® to taste (optional)

 

Eggs with Salsa

Serves: 4 - Prep Time: 5 minutes         

 

Eggs and salsa are a spicy way to start your day. Eggs are chock full of protein and the kick of the salsa livens up this typical breakfast. 

 

Ingredients

4 eggs
Salt and pepper, to taste
2 tablespoons of salsa
1 teaspoon of canola oil

 

Preparation

1. Heat the oil in a medium skillet
2. Add eggs and salt and pepper, to taste
3. Stir or scramble the eggs until thoroughly cooked
4. Serve and top the eggs with salsa
